German Potato Soup

Peel several potatoes (if necessary) and chop into bite sized bits.

Chop up an onion into small bits.

Put in pot with enough water to cover by about 1 cm.

Boil. Then simmer.

When potatoes are soft, turn off the heat and let it sit about 20 minutes if you can, but if you are hungry go ahead and skip this. It just helps the broth thicken.

Add salt and pepper and eat.

Super easy and more delicious than you'd expect.

  1. I love potato soup. A bit of bacon crumbled into it would be awesome as well. I've never tried such a simple recipe before though. Usually they have stock or boullion, but your's looks so simple I'm just going to have to try it.

  2. Oooh bacon improves most anything potato, true!

    It tastes way better than you expect from just potatoes, onions, water and salt and pepper. The key is to let it sit long enough that some of the potatoes kinda melt into the broth.

    Everyone in my house likes it, which counts as a miracle of minor proportions.
